Aloo Methi ki sabzi is one of the healthy vegetable in winters. Here’s a dish thats simple, delicious and very easy to make.
INGREDIENTS:
- Oil – 2 tbsp
- Cumi seeds – 1 tsp
- Mustard seeds – 1 tsp
- Asafoetida (Hing) – ½ tsp
- Ginger and Garlic Paste – 1tbsp
- Green chilli – 1
- Boiled potatoes – 3
- Turmeric powder – 1 tsp
- Red chilli powder – 1 tsp
- Coriander powder – 1½ tsp
- Garam Masala – ½ tsp
- Amachur powder (dried mango) – 1 tsp
- Chat Masala – 1 tsp
- Salt to taste
- Fenugreek Leaves (methi) – 1 cup
DIRECTIONS:
- Heat a pan and add 2 tbsp oil.
2. Add 1 tsp cumin seeds.
3. Add 1 tsp mustard seeds.
4. Add ½ tsp asafoetida (Hing).
5. Further add 1 tsp ginger and garlic paste and saute for a minute on low flame.
6. Add 1 tsp chopped green chilli.
7. Now add in 3 boiled and cubed potatoes.
8. Saute on low flame till potatoes turn golden brown in colour.
9. Now add 1 tsp turmeric powder.
10. Add 1 tsp red chilli powder.
11. Add 1½ tsp Coriander powder.
12. Add ½ tsp garam masala.
13. Add 1 tbsp dried mango powder (aamchur powder).
14. Add 1 tsp chat masala.
15. Add salt as per taste.
16. Mix it well and cook for 2-3 minutes on low flame.
17. Now add finely chopped methi (fenugreek) leaves.
18. Saute for 1 minute or until methi shrinks. Cover and cook for 5 minutes or until methi is cooked completely.
19. Aloo methi is ready, transfer in a serving bowl.
20. ENJOY!!!! aloo methi sabzi with hot chapati or paratha.
