A simple and easy north indian cuisine curry or sabzi recipe prepared with basic ingredients like potatoes, carrots and green peas with few basic spices which are easily available in everyone’s kitchen.
Aloo, gajar, mutter recipe is very basic and simple. This recipe is prepared with simple onion and tomato based gravy and tempered with cumin and mustard seeds. The tempering of ginger and garlic paste gives a new flavour and dimensions as compared to other traditional curries.
INGREDIENTS:
- Oil – 2 tsp
- Cumin seeds – 1 tsp
- Mustard seeds – 1tsp
- Ginger and garlic paste – 1 tsp
- Onion – 1
- Turmeric Powder – 1 tsp
- Red chilli powder – 1 tsp
- Coriander Powder – 1½ tsp
- Garam Masala – ½ tsp
- Cumin Powder – ½ tsp
- Salt to taste
- Tomatoes -2
- Carrot – 2 medium size (1 cup)
- Potato – 2 medium size
- Peas – 1 cup
DIRECTIONS:
- Firstly, heat 2 tsp oil in a pan or kadai.
2. Add 1 tsp cumin seeds.
3. Add 1 tsp mustard seeds and saute till it turns aromatic.
4. Add 1 tsp ginger and garlic paste and saute for 1 minute in low flame.
5. Further add 1 finely chopped onion and saute until onions shrink slightly.
6. Now add spices, 1 tsp turmaric powder.
7. Add 1½ tsp coriander powder.
8. Add 1 tsp red chilli powder.
9. Add ½ tsp garam masala.
10. Add salt to taste.
11. Addd ½ tsp cumin powder.
12. Saute until the spices turn aromatic. Make sure not to burn the spices.
13. Add 2 finely chopped tomatoes and mix well.
14. Cook on low to medium flame until the oil separates from the masala.
15. Now add 2 chopped medium size carrot (1 cup).
16. Add 2 or 1 cup chopped potatoes.
17. Lastly, add 1 cup of peas and mix well.
18. Now cover and cook for 10 minutes on medium flame or until vegetables cooked well.
19. Finally, aloo, gajar and matar curry is ready to serve.
