Kuttu atta, otherwise called Buckwheat flour, is removed from an organic product seed of the Fagopyrum esculentum plant. This gluten-free flour is developed as a grain-like seed, broadly cultivated throughout Asia and European nations. Kutta is used during fasting in India because it is the powerhouse of nutrition and gluten-free flour. Many recipes are made from Kuttu atta. There can be a wide variety of recipes from Kuttu atta, and one such recipe is Kuttu Atta Cake. It is very nutritious and tasty at the same time.
Buckwheat flour is a pseudocereal rich in protein, fiber, antioxidants, vitamins, and minerals. It has low-calorie content; one cup of kuttu ka atta contains 155 calories and is loaded with the greatness of minerals such as magnesium, phosphorus, niacin, zinc, folate, and vitamin B6. It gives the body much needed boost of nutrition. Kuttu atta holds utmost importance in Indian culinary traditions. The best part is it is locally available and it is inexpensive. It is save for consumption for those who have gluten allergy.
INGREDIENTS:
- 1 cup kuttu ka atta (Buckwheat flour)
- ¼ tsp baking powder
- ¼ tsp baking soda (khane wala soda)
- 1 ripe medium sized banana.
- ¼ cup curd
- 3 tsp (¼ cup) powdered sugar
- 2 tsp oil or butter.
- ¼ cup milk
- Almond, Cashews, Pistachio (5 each) and Raisins (10)
INSTRUCTIONS:
- Firstly, in a large bowl add 1 cup kuttu atta (buckwheat flour).
2. Add ¼ tsp baking powder.
3. Add ¼ tsp baking soda (khane wala soda).
4. Mix well all the dry ingredients and keep aside.
5. Lets prepare the wet ingredients. Further take a another large bowl and add 1 ripe medium sized mashed banana (make smooth paste).
6. Add ¼ cup curd and give a mix.
7. Now add 3 tsp (¼ cup) powdered sugar.
8. Add 2 tsp oil or melted butter.
9. Mix well. Don’t over mix.
10. Add dry ingredients (add gradually) and making sure there are no lumps.
11. Now using cut and fold method, mix the batter.
12. Add ¼ cup milk (if required) and prepare a smooth consistency batter.
13. Cake batter is ready.
14. Now add chopped almond, cashews, pistachio (5 each) and raisins (10). you can add dry fruits of your choice.
15. Mix well.
16. Take a mould and grease with oil or ghee and place butter paper.
17. Now transfer the cake batter to greased cake mould.
18. Also tap twice to level up uniformly and remove any air bubbles, if present.
19. Sprinkle some dry fruits on top.
20. Place the cake tray into the preheated oven or kadai (10 minutes). Bake the cake at 180 degree celsius for 25 minutes. If using kadai bake it for 30-35 minutes or bake till the toothpick insterted comes out clean.
21. Cake is baked, allow to cool completely.
22. Take a plate and demould the cake.
23. Remove the butter paper.
