Shakarkandi Ka Halwa (Sweet Potato Halwa) is a fast and straightforward dessert. INGREDIENTS:
- Sweet Potato (Shakargandi) – ½ Kg.
- Ghee – 4-5 tsp or as required.
- Cashews & Almonds – 2 tbsp each
- Milk – 1 cup (boiled milk)
- Sugar – ¼ cup (adjust sugar as per taste)
- Saffron – a pinch
- Cardamom – ½ tsp
DIRECTIONS:
- Firstly, take a pan and heat 1 tbsp ghee.
2. Add 2 tbsp cashew and 2 tbsp almonds.
3. Roast on low flame until the nuts turn golden brown and crisp.
4. Dry fruits are roasted well, take it out and keep aside.
5. Take a large kadai heat 3 tsp ghee.
6. Add boiled and grated ½ kg sweet potato (In a pressure cooker take sweet potatoes and pressure cook for 5 whistles).
7. Saute for 5 minutes or until the Shakarkandi changes colour slightly.
8. Now add 1 cup boiled milk and mix well.
9. Cook for 10 minutes or until all the moisture evaporated (cook on medium flame).
10. Now add ¼ cup sugar (Adjust the sugar according to the sweetness of the sweet potatoes) and mix.
11. Add a pinch of saffron (optional).
12. Add ½ tsp cardamom powder.
13. Sugar starts to melt. continuously stir keeping the flame on medium.
13. Further add roasted dry fruits and mix well.
14. Shakarkandi Halwa is done, turn of the flame.
15. Enjoy hot Shakarkandi halwa topped with more dry fruits.
