“Gond ke Ladoo” is a traditional North Indian sweet recipe made with edible gum (gond), wheat flour, ghee, and a combination of dry fruits. This Ladoo is not only delicious but is also known for its nutritional benefits, especially during winters. Gond ladoo ideal to serve to kids and elderly people during winters to provide the heat and warmth.
In Gond ladoo, the main hero or ingredient of the recipe is Edible Gum which is known as gond. Gond is rich in proteins, it provides energy and strengthen the immune system. Gond is acquired from the sap of specific trees, and the collecting system includes making entry points in the bark to permit the gum to overflow out. The gum is then collected, cleaned, and processed for different purposes, including medicinal and culinary applications.

Ingredients:
- 4 cup wheat flour
- 1 cup edible gum (gond)
- 1 cup powdered sugar
- 500 – 600 grams ghee (clarified butter)
- ½ cup almonds
- ½ cup cashews
- 1/3 cup melon seeds (karbooja or magaj ke beej)
- 1/3 cup pumpkin seeds.
- ¼ cup poppy seeds (khus-khus)
- 1 teaspoon cardamom powder
DIRECTIONS:
2. Roast on low flame until gond puffs up and turn slightly golden brown.
3. Take out the roasted gond in a plate and keep aside and fry all the gond in the same way.
4. Now in the same kadai add 1tbsp ghee, roast ½ cup almonds on low flame for 1 minute.
5. Keep the roasted almonds aside.
6. Roast ½ cup cashews until its turn slightly golden brown.
7. Roast 1/3 cup (4tbsp) melon seeds (karbooja or magaj ke beej) and 1/3 cup (4tbsp)pumpkin seeds, until it cracked. keep the flame low.
8. Now add ¼ cup khus-khus (poppy seeds) and roast until they start to pop.
9. Keep all the roasted dry fruits in a mixing jar and make coarse powder .
10. Crush the gond using your hand or with a help of bowl.
11. Now transfer the coarse powder of dry fruits in crushed gond and keep aside.
12. Further , take a large kadai and heat ½ cup ghee and 2 cup wheat flour (total 4 cups), roast it in batches.
13. Add more ghee as per requirement.
14. Roast the wheat flour on medium flame. Stir continously the flour to avoid burn or stick to kadai.
15. Roast until the wheat flour turns golden brown.
16. Keep the roasted wheat flour aside and roast the rest 2 cup flour in the same way.
17. Transfer the mixture of dry fruits powder and crushed gond into the same kadai.
18. Mix well making sure all the dry fruits and gond are well combined.
19. Add 1 cup powdered sugar (as per taste) and mix.
20. Add 1 tsp cardamom powder.
21. Mix it well.
22. Now start making ladoo when the mixture is still warm. It will get hard once cooled.
