Badam Rava Barfi Recipe | बादाम सूजी बर्फी रेसिपी | Almond and semolina Sweet

Badam rava barfi is a healthy and delicious Indian sweet made mainly from almonds (badam), semolina (rava), saffron (kesar), sugar, ghee (clarified butter), and flavored with cardamom. It’s a well-liked dish in India, particularly during festivals and festivities.

INGREDIENTS:

  • Milk : 2½ cup
  • Saffron (Kesar) : 10-12 strands
  • Ghee :  ¼ cup
  • Semolina (rava) : 1 cup
  • Sugar : 1cup
  • Roasted Almonds : ½ cup (chopped)
  • Cardmom Powder : ½ tsp
  • Sliced alomonds for garnishing.

DIRECTIONS:

  1. Firstly, heat 2½ cup milk in a pan.

2. Add saffron to the milk and mix.

3. Let it boil on low flame for 3-4 minutes. Then turn off the flame and keep aside.

4. Take a kadai and add ¼ cup ghee.

5. Add 1 cup Semolina (rava / Suji).

6. Roast till slightly browned on low- medium flame.

7. Now add hot saffron milk and mix well.

8. Add 1 cup sugar.

9. Add  ½ cup roasted almonds.

10. Add ½ tsp cardamom powder.

11. Mix and continue to cook till the mixture begins to leave the sides of the pan. 

12. Cook well, now turn off the flame.

13. Put the mixture into a greased tray.

14. Now spread the mixture evenly.

15. Sprinkle sliced almonds on top and press slightly.

16. Put in the refrigerator or 1 hours.

17. Cut into squares and serve.
