Arbi Cutlet is the perfect navratras recipe and can be regular tea time snack. It is prepared with Kuttu ka Aata and yogurt based dip. The recipe is prepared with crispy golden brown patties.
Arbi Cutlet is an easy, delicious and very different cutlet recipe, which require minimal ingredients. It is a kind of golden brown patties made with Colocasia root or Arbi. It is impeccably healthy and perfect snacks recipe. It can be perfect dish to include in dinner as well. Arbi is rich in Vitamin A, Magnesium, Potassium etc., which makes it a perfect dish with healthy diet. Arbi Cutlet is very easy to make and it does not absorb too much oil. There are many options to make this recipe a success; it can also be pan fried or shallow fired as per one’s wish.
Arbi is suited for fasting, as it is a root vegetable mildly with sweet taste. It just requires replacing some ingredients that are consumed during a fast. It is very healthy and has numerous health benefits. It helps to maintain healthy immune system. Arbi is rich in fibre and less than one gram of protein and fat. So many tasty recipe can be made from Arbi, which is highly beneficial for health. It has some texture and taste like sweet potato. Arbi prevents high blood pressure and hypertension which is commonly seen in most of the middle aged person.
INGREDIENTS:
For Arbi Cutlet:
- 250 grams arbi (colocasia)
- 4 tsp kuttu ka atta (Buckwheat flour)
- 1 green chilli
- 1 tsp grated ginger
- Rock salt (sendha namak) as per taste
- ½ tsp black pepper (kali mirch)
- 1 tsp carom ( Ajwain) )seeds (optional)
- 2-3 tsp oil
For Yogurt Mint Dip:
- ½ cup hung curd
- 1 tsp chopped cucumber
- 1 tsp chopped mint leaves
- Rock salt (sendha namak) as per taste
- ½ tsp black pepper (kali mirchi)
For frying cutlet:
- 2-3 tsp ghee or oil to fry.
INSTRUCTIONS:
- Take 250 grams arbi (colocasia) and boil it in a pressure cooker or in a pan till it becomes soft.
2. Peel them all and mash well.
3. Now add 4 tsp kuttu ka atta (Buckwheat flour).
4. Add 1 finely chopped green chilli.
5. Add 1 tsp grated ginger.
6. Rock salt (sendha namak) as per taste.
7. Add ½ tsp black pepper (kali mirchi).
8. Add 1 tsp carom (ajwain) seeds (Optional).
9. Add 2-3 tsp oil.
10. Mix well all the ingredients.
11. Arbi cutlet mixture is ready.
12. Further, take a plate and grease with ghee or oil.
13. While shaping the cutlet, apply some ghee or oil on your palms as the mixture is sticky.
14. Now pinch a ball sized arbi mixture.
15. Flatten slightly, to shape into a cutlet and prepare small flat patties as shown in picture.
16. Cutlet is ready to fry, put it into fridge for 10 minutes to set.
17. For fry the cutlets, heat a pan and apply 2 tsp ghee or oil.
18. Now place the prepared cutlets and fry them with some ghee or oil till golden brown.
19. Apply ghee or oil over the cutlets and cook for a minute on low to medium flame.
20. Flip the cutlets hen the base is partly cooked (after a minute).
21. Flip again once or twice till both sides are cooked properly.
22. Arbi cutlets are ready to serve, take out in a plate and turn off the flame.
For Yougurt Mint Dip:
- Take ½ cup hung curd in a bowl, drain excess water.
2. Add 1 tsp finely chopped cucumber.
3. Add 1 tsp finely chopped mint leaves.
4. Add rock salt (sendha namak) as required.
5. Add ½ tsp black pepper (kali mirchi).
6. Mix well.
7. Yougurt Mint dip is ready.
8. Finally, Serve hot -hot arbi cutlet with yummy yogurt mint dip……….ENJOY!!!!
